Unlike leafy salad with lettuce or spinach, Vinegret uses boiled potatoes and chopped beetroots, giving it a bright red or magenta - rather green - appearance. It's a. favourite food of many Russian, normally eaten during the holidays (especially New Year's Eve). It came into existence during the Soviet Era, at a time when fresh vegetables were difficult to find.
Along with boiled potatoes and beetroots, this salad consists of carrots, kidney beans/garden peas as well as pickled cabbage (or pickled cucumbers).
